  1. Lay raw chicken breasts in skillet and cover with cold water. Add bouillon cubes. Bring water to boil, cover with skillet lid, turn heat down and simmer 30 minutes.
  2. Remove cooked chicken and let drain a few minutes. Place cooked chicken in dish and cover with wax or foil wrap and refrigerate one hour or over-night.
  3. In very large bowl combine:
  4. mayonnaise, curry powder and Old Bay Seasoning powder, chopped apples - fresh lemon juice mixture, diced thick slice of red onion, diced celery, and halved red grapes.
  5. Once the chicken is thoroughly chilled, remove from fridge and chop it into cubes. Add to and combine with mayo, apples, lemon, grapes, seasoning, red onion, and celery.
  6. Arrange in individual large salad bowls or dinner plates:
  7. In the center place the washed, chopped combination of lettuces.
  8. Avocado slices will go around the perimeter of each salad bowl or dinner plate.
  9. Next, add the chicken salad mixture in a large mound on top of the lettuces.
  10. Next, hold peeled mango ontop of individual salad and slice mango strips and pieces onto salad. Allow mango juice to drizzle freely on top of chicken salad.
  11. Next, scatter about 15 cashews on top of each salad.
  12. Serve right away! Enjoy!
