  1. Make dressing first...
  2. put mayo, chipotle, lime and black pepper in a bowl and puree with immersion blender (or just put it all in the food processor)
  3. set aside in the refrigerator
  4. cook bacon, cut avocado, slice tomato, prepare lettuce leaves.
  5. toss shrimp with olive oil salt and pepper
  6. put on hot grill for about 3 minutes on each side. set aside
  7. slightly toast bread
  8. sandwich assembly
  9. lay out 2 slices of bread and smear generously with dressing, put down shrimp and avocado, lay down next slice of bread and another smear of dressing lettuce and tomato. Top with last slice of bread. There will be dressing left over and it makes a great salad dressing.
