"You can use cucumbers, zuchinni, or apples to make these homemade spiced "apple" rings. My family can't tell the difference from apples to zuchinni. It is easy but takes a couple of minutes each day, for about a week, to make. Well worth the small effort!"

  1. 1. Peel, seed and slice zuchinni, cucumbers or apples. Put in 1 gallon crock or glass container. Add: 1 cup pickeling lime and 1 gallon of water to cover.
  2. 2. Keep covered with water/lime liquid for 24 hours. Drain (discard), rinse, and drain(discard) again. Cover with cool water. Let stand for 2-3 hours (to leech out lime). Drain (discard).
  3. 3. Put veggie/fruit in large cooking pot. Add: 1 c. vinegar, alum, food coloring, and water to cover veggies/fruit. Simmer for 2 hours. Drain and discard liquid.
  4. 4. Put veggies/fruit in clean crock. Make syrup of: sugar, 1 cup vinegar, 1 cup water, cinn. sticks, and red hot candies. Boil and pour over veggies/fruit.
  5. 5. Let stand for 24 hours. Drain and RESERVE syrup. Bring syrup to boil and pour over veggie/fruit. Do this (step 5) for 3 more times (for a total of 4 days.
  6. 6. Drain and RESERVE syrup. Pack veggies/fruit into canning jars. Heat syrup and pour into jars. Seal and cold pack for 10 minutes in boiling hot water bath.
