  1. Boil ptoatoes until tender, drain and gently mash until broken apart, leaving large chunks.
  2. While potatoes are cooking make dressing:
  3. In small bowl combine mustard, vinegar, and lemon juice. Gradually whisk in olive oil. Add fresh herbs and salt and pepper to taste, stir to combine.
  4. In large bowl, pour dressing over potatoes, and gently turn to mix everything together. Cover and refrigerate 1 hour. Serve.
