"Our families favorite cake. The recipe is from 70's but has been updated to reduce the amount of oil."

Original recipe yields 10 servings

  1. Sift together flour, baking powder, baking soda, salt and cinnamon.
  2. In a seperate bowl beat together sugar, oil, eggs and applesauce.
  3. Add flour mixture to the wet ingredients and mix to combine. Do not over beat.
  4. Add carrots, pineapple and nuts. Fold to combine.
  5. Pour into 3 (9") round layer cake pans that have been greased and floured. Or one large 10 x 13" Pyrex pan.
  6. Bake at 350 35 - 40 minutes or until toothpick inserted in the center comes out clean.
  7. Removefrom oven, cool a few minutes in pans. Turn out on wire racks and cool thoroughly.
  8. Fill layers and frost top and sides of cake with Cream Cheese Frosting.
