  1. Prepare noodles according to package directions. Drain, rinse with cool water to stop cooking. Sprinkle with sesame oil and toss to mix. Set aside.
  2. In a large fry pan or wok, add enough oil to coat the pan and heat to very hot. Add 1/2 tsp ground ginger and 1/2 Tbs garlic and saute for 30 seconds.
  3. Add pork to oil and stir fry until well browned on the outside and done. Remove from pan and set aside.
  4. Add remaining 1/2 tsp ginger and 1/2 Tbs garlic to pan and saute for another 30 seconds. Add oil if needed.
  5. Add vegetables to pan and stir fry until brocolli just begins to become tender.
  6. Add soy sauce, fish sauce, and remaining dry seasoning and toss well to mix.
  7. Return pork to pan and mix with vegetables.
  8. Move ingredients to edges of pan to create an empty spot in the middle.
  9. Add peanut butter to center of pan and stir until melted.
  10. Add vinegar and hot sauce to peanut butter and stir well, then mix into remaining contents of pan.
  11. Add noddles to pan and toss to coat well with sauce and vegetables.
  12. Stir in peanuts if desired and serve immediately.
