  1. Place the tripe in a saucepan and cover with water. Add milk and water mint branch.
  2. Cook about 1 hour or until very soft. Remove, drain and let cool slightly.
  3. Cut into small squares. Book.
  4. Heat oil in a pan and fry the onion. Add the garlic, cumin, red pepper, stick and mix until thoroughly cooked. Season.
  5. Add the cooked tripe and potatoes and cut into squares. Bring to boil. Sprinkle the mint and drizzle with lemon juice. Mix well.
  6. • Serve with white rice.
