  1. Preheat oven to 375 degrees. Wash chicken breats and pat dry with paper towels. Cut a slit into each breast half approximately 2 inches long and 1 to 1 1/2 inches deep.
  2. Combine gorganzola, shallots, garlic and parsley in a small bowl. Add salt & pepper to taste. Divide mixture in half and stuff in to chicken breasts.
  3. Wrap 2 strips of bacon around each half and secure with toothpicks. Sprinkle with salt and pepper to taste. Place in a baking dish that has been sprayed with non-stick cooking spray. Bake for approximately 35 minutes or until chicken is cooked through.
