"My one birthday request from my grandmother would be Mayonnaise Cake with Fluffy frosting. I adapted her recipe to get 24 cupcakes and frost them with either a simple vanilla or peanut butter frosting! Hint: To get moist cupcakes, make sure you use regular mayonnaise. Low-fat or non-fat seems to make the cupcakes dry."
Line cupcake pan with liners (24 cupcakes). Sift together flour, sugar, baking soda, salt and cocoa powder. All at once, add the mayonnaise, water, and vanilla. Mix with hand mixer until smooth. Using 1/4 cup measure, scoop batter into cupcake liners. Bake for approximately 20 -25 minutes or until toothpick comes out clean. Cool and frost as desired.
