  1. Preheat oven to 400° F.
  2. Prep a baking sheet with parchment paper.
  3. Peel, dice, wash and spin dry potatoes into cubes.
  4. Add oil and salt and pepper generously; pour onto baking sheet.
  5. Bake for 20-25 minutes or until edges start to brown, or until fork tender.
