  1. Saute in a large pot until tender with a small dash of olive oil, the onions, carrots, celery, green pepper and garlic.
  2. While that's going, place 3 cups shredded cabbage (I use the bags of pre-shredded cabbage for slaw...easier than cutting one up) in bowl, with a bit of water, covered, in microwave for about 8-10 minutes. Drain and add to the pot with the diced tomatoes, veg stock and VGo.
  3. Add the spices and simmer for 20-30 minutes.
