Shmunky's Colby Jack Cheddar Biscuits


"These biscuits have an amazing aroma and taste that will turn any grump into a jolly lad! They a crispy on the outside, yet soft and puffy in the center. They freeze well too for making large batches. This recipe is best when hand made, so try not to be tempted by your mixers. Trust me, it will pay off in the end. Buy blocked cheese and grate it by hand for best quality. I used a medium size grate. I do NOT recommend using fine grated cheeses."

  1. Preheat oven to 400 degrees.
  2. Grease a large cookie sheet with the olive oil and set aside
  3. Using a large bowl and a fork: Mix flour, baking powder, parsley, thyme, salt, sugar, and cheeses together
  4. Cut in the butter (use the fork to smash it around until it's been well mixed and crumbly all over)
  5. Add the milk and stir until dough holds together (add more milk if necessary, but not more than a 1/4 cup)
  6. Drop large spoonfuls (heaping 1/8 cup) on the greased cookie sheet about 1 inch apart.
  7. Bake around 20 - 30 minutes (oven times will vary)
