  1. Saute mushrooms and garlic in hot oil in a large skillet 4 minutes or until tender.
  2. Add soy milk and bring to a boil. Boil, stirring occasionally, 6 minutes or until mixture is reduced by half.
  3. Stir in tomato, chives, and next 5 ingredients.
  4. Cook, stirring occasionally, until thoroughly heated. Remove bay leaf. Add drained pasta to the mushroom sauce, mix well, and serve hot with a shaving of fresh Parmesan on top.
