  1. In a large saucepan, cover the carrots with w3ater and bring to boiling. Reduce heat to medium high and cook for 10 minutes or until carrots are tender. Drain and set aside.
  2. In a large skillet, melt the butter. Add the honey and cook on low heat, stirring until well combined. Add the lemon juice and ginger and mix well.
  3. Add the carrots and stir to coat well. Cook on medium heat for 5 minutes or until heated through.
