"This is the best recipe I've tried for the usually called 'mexican wedding cookies'. These just kind of melt in your mouth with no need to chew on them. The pecan taste in incredible. They are a must in every christmas reunion with my family."

  1. Preheat oven at 375 degrees
  2. If butter not soft enough, melt in microwave for a couple of seconds until it has a soft consistancy. Add the flour, pecans, and powdered sugar, and mix until the dough forms.
  3. Roll dough into 3/4-inch balls, and place on an ungreased cookie sheet. (recipe makes about 2 1/2 cookie sheets).
  4. Check on the cookies, and you know they are ready when they are still soft and pale, but lightly golden on the bottom. Try not to over bake.
  5. When completely cool, roll the cookies on powdered sugar, and they are now ready to enjoy.
