Hearty One-Pot Vegetarian Chili

"A stove-top single pot blend of bulgur wheat, lentils, and beans that creates a hearty, satisfying vegetarian main course. I made this one night, using ingredients on hand, and my husband was happily surprised by the results! This recipe makes 4 generous servings, or 6 modest servings."

  1. Saute garlic and onions in oil on medium/high flame.
  2. Add spices and continue to saute until onion is translucent.
  3. Add all other ingredients (except the lemon juice, yogurt) to pot.
  4. Bring to boil.
  5. Simmer on med-low for approximately 10 minutes, or until cooked through (make sure lentils are soft). May boil uncovered to thicken, to cause liquid to evaporate.
  6. Optional: serve hot, with drizzle of lemon juice and dollop (or two) of plain yogurt/sour cream.
