Make sure you use eggs from range free chickens or chickens feed corn and or milo they will have golden color egg yolks. This golden color egg yolk will brighten up your egg salad sandwich."

  1. Day before boiled eggs. Place 4 eggs in pan of boiling water and cook for 10 minutes. Remove from heat and drain water from eggs. Place eggs in refrigerator.
  2. Peel eggs and cut up eggs (cube). Place in cut up eggs in bowl. Add mayonnaise, chopped onion and cilantro to eggs and mix until all ingredients are blended.
  3. To make sandwich take bread and spread egg salad on it, place sliced tomato and leaf lettuce on top of egg salad.
