"I forgot to add the 2 teaspoons baking powder to my standby carrot cake recipe and ended up with these. Every one raved about my "flop" and wanted the recipe. Sometimes you get a gift even when you fail."
Sift dry ingredients and set aside. In a bowl beat oil and eggs well. Add the dry ingredients and beat again. Add carrots, pineapple and nuts. Mix well again. Pour in an ungreased 9x13 pan and bake at 350 degrees for 30-35 minutes or until it springs back in the middle. Frost with vanilla or cream cheese frosting.
