  1. Preheat oven to 350 degrees. Grease a 2qt. casserole dish.
  2. In a 3 qt. pan, bring water to a boil, add salt and macaroni. Cook until al dente, about 8 minutes. Drain and set aside.
  3. In a small saucepan melt butter completey, then stir in flour. Let cook 2 minutes, but don't let it brown.
  4. In a different pot, heat milk and cream until nice and hot.
  5. Slowly add milk and cream to roux a little at a time, stirring constantly so lumps do not form. Let cook about 5-6 minutes.
  6. Add cheese and salt & pepper to taste.
  7. Fold in macaroni and cream of mushroom soup just until incorporated. Stir in frozen peas.
  8. Pour into prepared 2 qt. casserole dish.
  9. Crush crackers, chop parsley, and sprinkle on top of casserole. Drizzle olive oil evenly over crushed crackers.
  10. Bake for 30 min. or until bubbling and top is golden brown.
