Spinach Cheese Stuffed Mushrooms

  1. Preheat oven to 350 degrees.
  2. Remove stems from mushrooms. Place in bowl and coat with olive oil. Place coated mushrooms on baking tray with gills up.
  3. In mixing bowl, combine drained spinach, cheese, minced garlic, garlic powder, salt, and pepper. Shoot for a mixture of twice as much cheese as spinach.
  4. In a separate mixing bowl, combine melted butter, Panko bread crumbs, Italian Seasoning, garlic powder, and pepper.
  5. Stuff each mushroom with the spinach/cheese mixture and then add topping.
  6. Bake at 350 degrees for 30 minutes or until cheese is melted and tops are browned. Serve warm.
