  1. Preheat oven to 425
  2. Cut up beets in 3/4 inch cubes or pieces. Place olive oil in bowl and cut up beets. Toss beets in bowl until coated.
  3. Place beets on cooking stone every spaced, very lightly sprinkle a little sea salt and put in oven on middle rack position.
  4. Cook from 10 to 20 minutes (done when you can stick a fork in them and it comes out easily.
  5. Makes 4 servings.
