  1. Put first seven ingredients into a medium saucepan. Bring to a boil and then simmer 7 to 8 minutes. Remove from heat and let sit 5 minutes.
  2. Remove bay leaves. Place solids into a food processor with metal blade. Process, adding softened butter pieces by piece.
  3. Add remaining salt, Tabasco Sauce, black pepper and Cognac. Process until smooth.
  4. Place into small crock, cover and chill until firm.
  5. Serve with bagel crisps or other firm crackers.
