  1. Dissolve the yeast in 3/4 cup lukewarm (105-110 degrees) water with a pinch of sugar, let stand 10 to 15 minutes until the mixture begins to foam.
  2. Blend the flour and salt in large bowl, set aside.
  3. Add the egg yolks, one of the egg whites, and sugar to the yeast mixture, stir to blend. Add water, milk, butter, oil and vanilla, stir until the mixture is smooth.
  4. Stir the liquid mixture into the flour mixture and beat until smooth.
  5. Beat remaining 3 egg whites until stiff peaks form. Gently fold the egg whites into the batter.
  6. Let the batter stand for one hour, stirring every 15 minutes.
  7. Bake in preheated Belgian-style waffle iron.
