  1. 1. Boil pasta according to package specifications. drain and rinse.
  2. 2. In medium sauce pan melt 1/4 c butter or margarine on low heat. Add flour and stir until dough like.
  3. 3. Add cold milk and wisk until no clumps remain. Cook on medium heat for about 2-3 minutes, stirring occasionally.
  4. 4. Take off heat and stir in about 11 oz of sharp cheddar cheese until smooth.
  5. 5. Add cooked pasta to the cheese sauce and stir. Pour mac-n-cheese into 8x8 inch pan. Sprinkle with remaining 1 oz cheddat cheese and 1/8 c parmesan cheese.
  6. 6. Bake at 375 degrees for approx. 35 minutes.
