What I mean by street food is that you can get it almost anywhere in Sichuan--even a small food stand on the side of the street. It is actually simple to make, and the ingredients are easy to find. It is definitely a quick, easy meal, though you might want to watch out for the garlic :)"

  1. Mix garlic, peppercorn oil, dark soy sauce, rice vinegar and sesame oil in a small bowl as noodle sauce. Set it aside.
  2. Bring a pot of water to boil, put in the bean sprouts. Keep the water boiling for 2 minutes. Drain the water and quickly transfer the bean sprouts into cold water until they are totally cool, then transfer to the serving bowl and set aside.
  3. Bring another pot of water to boil, and put in the noodles. Boil for 3 minutes. Drain the water, then quickly transfer the noodles into a bowl of cold water until they are totally cool. Mix the noodles with 1 teaspoon of vegetable oil. Put the noodles on top of the bean sprouts.
  4. Pour the sauce on top of the noodles, and mix the noodles and bean sprouts together well with the sauce.
