  1. Heat oil in large stock pot over med heat. Add garlic, onions and scallions and saute 10 minutes, stirring often. Mix in all ingredients,and bring stock to boil. Lower heat to a simmer and cook one hour, stirring occasionally. Strain, pressing juices out of vegetables. Cool. Refrigerate up to one week or freeze up to 3 months.
