  1. Mix these in a small bowl - 1/2 cup warm water (90 - 110 degrees), 1 T yeast. Mix these in a large bowl - 1 cup oats, 1/2 cup whole wheat flour, 1/2 cup packed brown sugar, 1 t salt , 2 T vegetable oil.
  2. Pour 2 cups boiling water over the oat mixture.
  3. Stir it until it cools down to 90 - 110 degrees.
  4. While it's cooling, oil a large bowl and 2 loaf pans w/ cooking oil.
  5. When mixture has cooled to 90 - 110 degrees, add the yeast/water and stir.
  6. Stir in 5 cups white flour.
  7. Knead it for sevral minutes - or a couple of minutes if using a mixer and dough hook.
  8. Turn dough into the greased bowl, cover. Leave in a warm place for 30 - 40 minutes.
  9. Using a large spoon, press down the dough and let it rise again for about 30 min.
  10. Divide the dough and shape into 2 loaves. Put into loaf pans.
  11. Let the dough rise in the bread pans for about 30 min. Prehat oven to 400.
  12. When oven is hot and dough has risen, bake for 25 minutes (DROPPING TEMP OF OVEN DOWN TO 350 AFTER BREAD HAS BAKED A FEW MINUTES). Then butter the top of the bread and bake for another 5 minutes.
  13. Remove from pans and cool on rack.
