  1. Heat the oil in a large skillet over medium heat and add the ginger. Cook for 5-7 minutes until ginger is a little soft and browning.
  2. Add the fish and cook about 3 minutes on each side. Remove the fish from the pan.
  3. Add soy sauce, oyster sauce, and fish and stir well.
  4. Add onion and red pepper. Cook for about 4 minutes.
  5. Add the catfish back into the pan, covering it with the sauce and other ingredients. Cook for another 3 minutes or until the fish flakes easily.
  6. Top with scallions and serve over hot jasmine rice.
