"Kung Pao Chicken (Chinese Name: Gong Bao Ji Ding) is one of most common dishes you will see in almost any Chinese restaurant, and you may see it made with different ingredients. The most original one I have seen was with green onion only and no other vegetables. Today I am making it with vegetables, which reminds me of the very first time I had Kung Pao Chicken."
Marinate the chicken cubes with 1 teaspoon soy sauce, 1/4 teaspoon corn starch, and 1 teaspoon vegetable oil for at least 15 minutes.
Mix ingredients for the sauce together and set it aside.
Heat 3 tablespoon vegetable oil, and put in the dried pepper and Szechaun pepper corn, stir until the color of the dried pepper turns dark red. Then put in the chicken cubes, stir fry it until the chicken turns totally white. Add the garlic, green onion, and ginger, and stir until you can smell the aroma. Add the celery cubes, stir fry it for about 3 minutes.
Pour in the sauce and stir evenly then add the peanuts and stir again.
