Quick Lemon Chicken Rotelle

"There are few ingredients that I always have on hand in my kitchen: chicken cutlets, pasta, potatoes, lemon, garlic and bullion. Having these on hand have made many effortless dishes in a hurry. Adding potato as a gravy thickener is probably not something unique, but if you season it right, an ordinary sauce can be very tasty."

  1. Heat 2 tablespoons oil in large sautee pan. Sautee chicken, lightly browning on both sides until juices run clear. Season with salt and pepper. Set aside.
  2. Add cubed potatoes to pan. Season lightly with salt and pepper. Add chicken bullion and 1 cup water. Bring to boil and steam potatoes until fork tender, about 10 minutes.
  3. Mash potatoes with fork or masher. Added sliced garlic, cook 1 minute. Season with garlic salt and lemon juice. Bring to boil again until thickend, about 3 minutes. If too thick add more water until desired consistency.
  4. Slice or shred cooked chicken and add to sauce. Add cooked pasta plus margarine and chopped parsley. Mix well and if needed, season with salt and pepper
