  1. Pound chicken to tenderize.
  2. Combine bread crumbs, flour, Italian seasoning, garlic powder, salt and pepper in a shallow bowl.
  3. Dip chicken breasts into egg, then into bread crumb mixture to coat.
  4. Let chicken sit in refrigerator for 30 minutes.
  5. Fry chicken in oil until juices run clear. (Approximately 8-10 minutes per side).
  6. Place chicken breasts side-by-side in a baking dish. Cover with tomato sauce. (Ensure there are no "bald" spots.)
  7. Bake at 375 degrees F (190 C) for 15 minutes.
  8. Sprinkle cheese onto chicken and continue baking uncovered for another 5 minutes or until cheese is bubbly.
