  1. In a large soup pot, put the oil and add the onions. Cook them until the edges are brown to partly black. Don't be afraid of them being too brown. Remove to the holding bowl.
  2. Add the carrots and the celery and cook them a little til the carrots brown a little. Remove to the holding bowl.
  3. Add a little bit of oil if needed and brown the ground beef. Remove to the holding bowl.
  4. Add the margarine and the flour to the pot and make the roux. To the roux add the marinara, garlic, bouillons; stirring all in to combine.
  5. Slowly add in the hot water, stirring it after each addition. Once its completely thickened, add in the noodles, and the holding bowl ingredients, and the basil and parsley.
  6. Once the noodles are cooked, add in the cheeses and the half and half. Season with salt and serve.
