"You won't go to a potluck in the basement of a Lutheran church in Minnesota without seeing a dish like this. It does not resemble actual Chinese chow mein - it's a creamy rice hotdish cooked up in a skillet and served with crunchy chow mein noodles. Pour it in a crockpot and bring it to the next funeral."

  1. Heat vegetable oil in a large frying pan. Add hamburger and cook until slightly browned. Remove from pan and set aside.
  2. Pour 2 cups water into same frying pan and add celery. Cover and boil until celery is very tender, adding more water if necessary.
  3. Add remaining ingredients except hamburger, including remaining 2 cups water to skillet and turn heat to medium high.
  4. Cook uncovered, stirring often, for about 5-15 minutes or until rice is tender and mixture has thickened considerably.
  5. Stir in cooked hamburger and cook until heated through.
  6. Serve over bed of chow mein noodles.
