  1. 1. Cook bacon in Dutch oven. Remove bacon.
  2. 2. Add the onion, minced garlic, ginger and cinnamon stick and cook for about 5 mins, until the onion has softened.
  3. 3. Add the cabbage, stirring and cooking, for ten minutes.Then add the marjoram, garam masala, vinegar, bay leaf, whole cloves and apple.
  4. 4. Reduce heat to medium-low, cover, and simmer for 1 to 1 1/4 hrs.
  5. 5. Stir in brown sugar or maple syrup and cook for an additional 15 mins, or until most of the liquid has cooked away.
  6. 6. Remove bay leaf and cinnamon stick before serving.
