  1. place the coconut on a cookie sheet in a 300 degree oven and brown for 4 minutes. Whisk room temperature cream cheese, pina colada mix, and powdered sugar together until smooth.
  2. Fold in 1 package of cool whip. Lightly spoon into the crust. Top with the second package of cool whip and the toasted coconut*.
