  1. Cut tops from chiles and remove seeds. Place on cookie sheet and roast under broiler until the skins bubble and remove easily. (or, if you prefer, you can substitute canned green chiles, such as "Ortega" brand.)
  2. Preheat over to 350 degrees. Spray or butter a 9 X 13 baking dish.
  3. Lay half the chiles in bottom of prepared baking dish. Sprinkle half the grated pepper jack cheese over top, evenly. Repeat with another layer of peppers and the remainder of the cheese.
  4. In a medium mixing bowl, combine eggs, milk, flour, salt, and pepper, beating until well blended. Pour over the cheese and peppers evenly. Bake in 350 degree oven for 30 minutes or until toothpick comes out clean. Remove from oven and pour enchilada sauce over top, then return to oven for 5 additional minutes.
  5. Serve with sour cream, sliced avocados, and cilantro.
