  1. Start by frying your aubergine/eggplant slices until golden on both sides then set aside.
  2. In a pot add the onion and fry for a few minutes, next add the garlic and beef. Fry for 10 minutes.
  3. Add the tomato sauce, vinegar, sugar and herbs (aside from the fresh basil) and season well.
  4. Allow to simmer for 20 minutes.
  5. In an oven proof dish layer a spoon of the sauce then create a layer of aubergine.
  6. Next add a few leaves of fresh basil and a sprinkling of parmesan.
  7. Continue this layering until all the sauce and aubergine/eggplant has finished.
  8. Preheat the grill to high.
  9. In a bowl add the lemon juice to the beaten egg and pour the mixture over the the dish.
  10. Stick it into a hot oven to grill until the top is golden.
  11. Serve with a nice side salad.
