"YUMMY! Usually I bake them again in their shell for dramatic effect, but you can peel and roast the sweet potatoes, then mash them and place in a casserole dish"

  1. Preheat oven to 400 degrees F. Clean potatoes throughly and dry with paper towels. Rub potatoes with oil, prick with fork then wrap in foil.
  2. Bake for about 45 minutes or until soft. Squeeze gently with oven mit to determine this.
  3. Combine remaining ingredients in a large bowl.
  4. Once potatoes have cooled to the touch. Cut in half lengthwise. Scoop potato into cream cheese mixture; combine well.
  5. Spoon this mixture back into potato shells. Return filled potatoes to the oven for about 5 minutes or until warmed through.
