  1. Season chicken breasts with salt and pepper
  2. Roast at 400 degrees for 20 to 25 minutes; shred.
  3. Combine ingredients in a bowl (use only 1 c jack)
  4. Add chicken last, after creaming everything else together.
  5. Put into a glass shallow baking pan, add remaining jack cheese. Bake at 350 for ~20 mins until bubbly.
