Cottage Cheese & Swiss Quiche with Mushroom Crust

  1. Melt 3 tablespoons butter.
  2. Add mushrooms and cook until limp.
  3. Remove pan from heat and stir in bread crumbs and wheat germ.
  4. Turn into 9 inch pie pan, pressing evenly to form the crust.
  5. Melt remaining 2 tablespoons of butter and saute the onion until soft.
  6. Spread the onion over the crust.
  7. Spread the Swiss cheese on top.
  8. Mix the cottage cheese, eggs, thyme and marjoram until smooth.
  9. Poor onto crust.
  10. Sprinkle with paprika.
  11. Bake at 350 degrees for 25-30 minutes (until knife comes out clean.)
  12. Let stand 10 minutes before serving.
