  1. Take a large soup pot and put it over a medium heat. Put in the butter. Add chopped onions, shallots, and garlic. Sauté until yellowed.
  2. Chop carrots, celery, celeriac, and potato. Add about a cup of broth and chopped vegetables to the pot. Sauté until heated.
  3. Add the rest of the broth and turn up the heat. Add the spices and the herbs.
  4. Peel and chop the pear. Add to the soup.
  5. Cover and let cook until the vegetables are soft. About 20 minutes.
  6. When the vegetables are soft, turn off the heat and let sit to cool a bit for about 10 minutes. Then add cream or milk if desired.
  7. Put the soup into a blender and blend until smooth.
  8. Scoop into bowls and garnish with a pinch of fresh parsley, a slice of butter, or a small glob of cream. Enjoy with a hearty bread or crackers.
