White Bean Stew


"This is the beans that my 8 month old (I puree it), 3 year old and husband love! It is packed with nutrients and flavor. It is a staple in our house and can be eaten with rice or as is. If you like bean stews this one is a keeper.You can omit the sausage for a vegan stew or add smoked pigtails to the ingredients. Yum!"

  1. Soak beans uncovered in a 6 qt. or 10 qt. pressure cooker from the morning until about 2 hours before dinner time. If making them for lunch soak overnight until mid morning. Do not discard water.
  2. When ready to make beans you cut the sausages into bite size pieces and add to beans.
  3. Pressure cook on medium heat for about 45 minutes.
  4. While the beans are softening. Wash, peel and cut all vegetables into medium to large size cubes (you don't want them disintegrating in the pressure cooker).
  5. I like to leave the pumkin unpeeled because it keeps it together.
  6. Have sofrito on hand.
  7. Once the pressure cooker has cooled and the beans are fairly soft add all the veggies and sofrito.
  8. Pressure cook again at med. heat (a gentle rock) for about another 30 minutes.
  9. Cool down pressure cooker until you can open it again and stir.
  10. Adjust salt and pepper.
