  1. Combine first seven ingredients. Add 1 tablespoon of the tomato paste to ground chicken mixture.
  2. Form into 4 patties. Make sure they are nicely flattened.
  3. Cook in tablespoon of oil on medium for about 4 minutes on both sides. While cooking burgers cut up onion.
  4. Once burgers are cooked through. Remove from pan and set aside.
  5. Put onion in remaining oil and chicken juices. Cook until translucent. (About 3-4 minutes)
  6. Add remaining 2 tablespoons of tomato paste, 1 cup of the tomatoes, and 1 cup chicken stock.
  7. Cook until reduced by half and thickened. (About 5 minutes)
  8. Add burgers and cover with tomato mixture cover for about 3 minutes.
  9. Add cheese and cover for another 1 minute.
  10. Place burgers on buns and spoon tomato mixture over. Enjoy!!!
