Yellow Rice and Beans


"This is a family recipie I've been trying to perfect since I spent a summer in Puerto Rico when I was 13 years old and my Aunt Francisca made this for me. She served it with Tostonies (fried plantains) and it was my favorite meal!"

  1. Place 2 cups low sodium chicken broth and 2 cups water into a large pot.
  2. Spray a skillet with Pam and chop onions. Add onions and garlic to skillet and cook until onions are carmelized.
  3. Add all ingredients except rice to pot with chicken broth and water and bring to a boil.
  4. Once water begins boiling, add rice. Reduce heat to a simmer, stir rice then cover and set timer to simmer rice for exactly 20 mins. Do not lift cover or stir rice during this time!
  5. After 20 mins, remove rice from heat and remove cover.
  6. Let rice sit for 5 mins and then fluff with a fork.
  7. Rice will be aromatic and richly flavored but not spicy. Enjoy!
