  1. Preheat oven to 350.
  2. Beat sugar and oil together, then add eggs and mix thoroughly. In separate bowl, mix all dry ingredients together.
  3. Add carrot, zucchini and walnuts if using and fold in until just blended. Pour into greased loaf pans and bake for about 40 minutes.
