Crustless Quiche Tarts

"I like quiche, but my Significant other doesn't like the crust and we are both on a low saturated fat, low carbohydrate diet. This is a nice, quick use for egg whites and spinach that I can slip in the fridge and grab for a quick snack."

  • Cook

  1. Preheat oven to 350.
  2. Mix the eggs, spinach, mushrooms, and 1/2 cheese in a bowl. Add salt and pepper as desired.
  3. Place into 12 muffin cups evenly as possible. Sprinkle with remaining cheese. (spray muffin pan with oil, or paper cups unless you have silicone.)
  4. Bake for 30 minutes, until eggs are set.
