  1. In a double boiler melt butter. When the butter is cool, remove white fat that forms on top.
  2. When the butter is solid, drain off any water that forms on the bottom of the pan.
  3. The next day, while your seafood is cooking reheat butter and serve in individual ramekins.
  4. When draining water from butter dump the butter into a microwave safe bowl for easy reheating.
