Delicious Minestrone Soup

"This soup is a family favorite....we never get tired of it. It's rich, beefy tomato broth is full of flavor and the Italian seasonings really add zest to the soup. It is warming on a cold day but light enough to eat with a salad on a summer day. The variety of veggies and beans make this recipe both tasty and nutritional. Wonderful!!!"

  1. Put all the ingredients in a large soup pot except the rinsed beans and fresh spinach. Cover with lid and bring to a slow boil. Reduce heat and simmer for 15-20 minutes (until veggies are just tender.) Add rinsed beans and fresh spinach, simmer just until the spinach is wilted. Ladle soup into bowls and garnish with croutons, basil and Romano cheese. Serve with crusty bread.
