Easy Gourmet Chicken with Goat Cheese

  1. Preheat oven to 400 F and lightly grease a 9x13 baking dish.
  2. Season chicken thighs with oregano, basil, salt, pepper and about 2 tablespoons of the sundried tomato dressing.
  3. Flatten a thigh with the smooth side down and place a slice (or crumbles) of cheese on one short end.
  4. Roll the chicken starting at the end with cheese and place in baking dish with seam side down.
  5. Repeat with remaining chicken.
  6. Pour remainder of dressing over the chicken and cover with foil.
  7. Bake for approximately 30 minutes. Remove foil and bake until browned another 10-15 minutes or so.
  8. Serve with the juices/sauce ladled over top.
