  1. Preheat oven to 350° F.
  2. Cut off the tips of a head of garlic (leaving the skin on and the bulb intact.)
  3. Place on 2 layers of aluminum foil, drizzle with the 1 tablespoon of oil.
  4. Wrap up like a package, cook for 25 minutes in preheat oven until golden.
  5. Garlic is done when soft and lightly browned.
  6. Let cool, it will be hot for a little while.
  7. Scrub or peel, rinse and dice potatoes into uniform pieces.
  8. Allowing the potatoes to come up to a boil WITH the water will prevent them from getting grey spots while cooking.
  9. Put a dutch oven 2/3 full of water on to boil, heat mark high; sprinkle generously with salt and put potatoes in the water.
  10. Once it comes to a boil, set timer for 10 minutes, check for potato to fall off fork inserted into it, then drain and turn off heat.
  11. Add everything to pot and mash until desired texture is achieved.
